Mary says that this Crispy Mozzarella Crusted Chicken with Couscous is one of her family’s favorite meals! This recipe feeds 2, so double it if you need it to feed a family of 4!
Crispy Mozzarella Crusted Chicken with Couscous Ingredients
- 1 lemon
- 1/4 cup panko breadcrumbs
- 1/2 cup mozzarella
- 1 teaspoon Italian seasoning
- 10oz chicken cutlets
- 2 tablespoons of sour cream
- 8oz broccoli florets
- 1/2 cup couscous
- 1 unit chicken stock
- 2 tablespoon olive oil
- 2 tablespoons of butter
- Salt and pepper for seasoning to taste

Adjust rack to top position and preheat oven to 425 degrees, wash and dry all produce and zest and quarter lemon.

In a medium bowl combine panko, mozzarella, Italian seasoning, 1 tbsp olive oil, salt and pepper.

Pat chicken dry with paper towels and season all over with salt and pepper . Lightly coat a baking sheet with a drizzle of olive oil. Place chicken on one side of sheet and evenly spread sour cream onto tops of chicken. Mound with panko mixture pressing firmly to adhere (no need to coat the undersides) .

Toss broccoli on the opposite side of chicken, cover broccoli with a large drizzle of olive oil, salt and pepper. Place the sheet in the oven for 15 to 20 minutes .

Meanwhile melt 1 tbsp butter in a small pot over medium heat, add couscous and a pinch of salt. Stir until toasted (about 2-3 minutes) and add 3/4 cup of water and stock concentrate. Bring to a boil then cover and reduce to a low simmer. Cook until couscous is tender ( about 6-8 minutes) and drain any excess liquid.

Once chicken is done, stir 1 tbsp of butter into couscous until melted. Next, stir in lemon zest and juice to taste, season with salt and pepper. Divide couscous chicken and broccoli between plates serve with remaining lemon wedges on the side.
