Pot roast has got to be one of the coziest dinners for a chilly winter night. And this French Onion Pot Roast recipe kicks up the delicious factor one more level!
French Onion Pot Roast
Ingredients:
- 3 lbs chuck roast
- 3 large yellow onions, sliced
- 2 cups low-sodium beef broth
- 1 cup dry red wine (e.g., Cabernet Sauvignon)
- 4 sprigs fresh thyme (or 1 tsp dried thyme)
- 2 bay leaves
- 2 tbsp butter
- Salt and pepper to taste
French Onion Post Roast Instructions:
- Preheat oven to 325°F (160°C). Season the chuck roast with salt and pepper.
- Heat oil in a large Dutch oven over medium-high heat; sear the roast on all sides for 3-4 minutes until browned. Remove and set aside.
- In the same pot, melt butter and add sliced onions. Sauté until golden brown, about 15 minutes.
- Add beef broth and red wine to the pot, scraping any browned bits off the bottom. Stir in thyme and bay leaves.
- Nestle the seared roast back into the pot, spooning some broth over it. Cover tightly.
- Transfer to the oven and cook for approximately 3 hours, until fork-tender.
- Let rest before slicing or shredding; serve hot over mashed potatoes or with crusty bread.
